A mezcal created the old way, with mallets instead of a Tahona.
Sinai is done 'como ayer' which translates to like yesterday. They mean to say that they produce like their ancestors did. With mallets instead of a tahona, so very labour intensive.
Mezcal Sinai is crystal clear. The aroma has hints of cacao, light smokiness, raw agave, and a clear sweet sour acidity. The taste is smooth and sweet with a protein character and fruity and herbal long finish.
Best enjoyed as it is or through an excellent cocktail.
Sinái is made in the most ancestral way possible. After cooking, the agaves are being smashed in a wooden canoe with mallets. The fermenting happens in wooden vats and the juice is then distilled in clay pots.
