Amber. Rich aromas with lots of flowers and a hint of fresh grass. It has the character of raw agave which is perfectly married to the barrel aromas of vanilla and chocolate. It is soft and has a long finish with a hint of black pepper and bitterness. A very well balanced and made tequila añejo.
This tequila is best enjoyed neat in a Riedel tequila glass served slightly below room temperature. It is an exciting and perfect combination of some cheese. For bartenders with the highest ambitions it will make an astonishing Old Fashioned.
The agave that is used is cultivated in fields on the mountainside of Los Altos. The agave is cooked in large brick ovens heated with steam and the agave juice is left to ferment in big steel tanks to the soothing sound of Beethoven. The tequila is distilled in traditional copper pot stills. It has been aged for twelve months in casks previously used for aging Jack Daniels whiskey.
