On the nose, sophisticated balance between wild herbs, dried stone fruit, caramel and honey, deep minerality, and oak firewood. On the mouth, initial sweetness, fruity and herbal notes, and smokey and caramel tones. In the end, moist and earthy with subtle hints of Nogal wood.

Nocheluna is crafted by fourth-generation Maestro Vinatero Don Eduardo Arrieta (Don Lalo) in collaboration with renowned Sotol expert Ricardo Pico and Master Distiller Iván Saldaña. Its production process stays true to artisanal methods from harvest to distillation. They are dedicated to the art of making this wild spirit, rooted in respect for those who paved the way for Sotol today.
Production details
The sotol plant, relative to the agave plant, is native to the desert and is extremely resilient. Nocheluna comes from sustainably managed wild Dasylirion. After approximately 12-15 years, the plants are responsibly harvested by hand.

Raw Material
The dried kernels i are cooked near the boiling point in a lime water, alkaline solution. Maize is left in the alkaline cooking liquid until kernels soften and hulls are dissolved. Kernels are then washed in fresh water, dried in hot air and then roasted.
